Omelette with broccoletti cream and bacon

Ingredients for 4 people:
6 eggs, 80g of bacon, one jar of 180g of broccoletti cream made by “Orti di Anguillara”, 50g of grated parmesan, parsley, one chive, one clove, extra virgin oil, salt and hot pepper.

First of all you have two cut in small pieces the bacon and cook it in a frying pan with 2 spoons of oil, hot pepper, minced onion and parsley and one clove. Add the broccoletti cream and cook it for few minutes. After that you can remove the clove and leave the cream with the bacon until it becomes cold.
Then, you have to beat the eggs and add the cheese, the broccoletti cream, and put a little bit of salt.
Afterwards, put two spoons of oil in a frying pan and when it is hot pour the egg mixture in it. With a circular motion, you have to incline the frying pan, so that the mixture can cover uniformly the bottom of the pan. Cover it with a lid and leave it cooking. When the omelet severs itself from the pan, it will be the moment that you can turn the omelet. When it is cooked, put it in a plate and you can serve it.
